...if by a "Liberal" they mean someone who looks ahead and not behind, someone who welcomes new ideas without rigid reactions, someone who cares about the welfare of the people -- their health, their housing, their schools, their jobs, their civil rights, and their civil liberties -- someone who believes we can break through the stalemate and suspicions that grip us in our policies abroad, if that is what they mean by a "Liberal," then I'm proud to say I'm a "Liberal." David Eyre's Pancake
2 eggs 1/2 cup flour
1/2 cup milk 4 tblsp butter
2 tblsp sugar pinch of nutmeg (I like cinnimon)
Preheat the oven to 425 F. In a mixing bowl, lightly beat eggs, add flour, milk and nutmeg and lightly beat until blended but still lumpy.
Melt the butter in a 12 inch skillet with a heatproof handle over medium high heat. When very hot but not brown, pour in the batter. Bake in the oven until the pancake is billowing on the edges and golden brown, about 15 min.
Working quickly, remove the pan from the oven and using a fine meshed seive, sprinkle with the sugar. Return to the oven for 1-2 min more. Serve with jam, marmalade, ice cream etc
